There's plenty of variations on the basic boneless prime roast formula so feel free to improvise.

Boneless roasts are sometimes called ribeye roasts or "eye of the rib". A boneless roast serves more habitancy per pound -- you can count on getting two servings per pound rather than about 1 1/2 servings per pound for a standing rib roast. Raising Rabbits for Meat - Why Rabbits Vs Other Animals

Should you grow rabbits for meat? Let's take a look at the facts and details to make an educated decision Why Rabbits? Is it worth it What's involved? Dispelling misconceptions.

When raising animals for food there are multiple considerations Lets take a look at why I think rabbits are the best animal for the family to yield at least some of their own meat. If you conclude to raise rabbits for meat, you will need to read other longer articles to tell you all things you need to know. Food for the rabbits: Rabbits can eat rabbit food sold by Purina and other similar animal food producers. Only qoute there is that it will probably cost you more than the meat is worth to go this route, still since animal feeds have nutrients specifically balanced for single animals it might not be bad to give rabbits a partial diet of rabbit feed. The bulk of what one would feed rabbits is Alfalfa. They don't do well on only lawn grasses. I would plant part of my back yard with Alfalfa and when I wanted to harvest some to give to the rabbits, just run over the patch with a bagging lawnmower and give the clippings to the rabbits. Easy and free! You may also buy alfalfa by the bale. Additionally you may supplement the rabbits diet with whatever green from a garden that citizen don't eat for example the green parts of a carrot plant. Of course any waste vegetables from the bottom of your refrigerator would also to the rabbits. If all things fed to the rabbits was free the meat would be essentially free. (After you get set up to keep them.)

Value and ability of the meat: Rabbit meat is high quality. It is among the bottom in fat and cholesterol of any out there. I think it tastes good too.

This way the waste falls out for easy clean up. The wire must be thick so as not to damage the rabbits feet. Chicken wire for instance is no good because the wire is too fine. This would cause too much weight per quadrilateral inch to be applied to the skin of the rabbits feet and cause discomfort or damage The hutch should be about 1.75 times the distance of the body of an adult rabbit nose to tail. So if it is a small breed say 1 foot in distance the hutch would be 1' 9" by 1"9" for a large breed 2' long you would be seeing at 3' by 3' or a exiguous larger. It is best to keep the rabbit all it's life in the cage. This is not cruel at all. Don't think that rabbits want the same things in life as a person or for that mater a dog. Rodents are genetically programmed to like to be in there dens because that is where they are safe. They only go out because they have to feed. If additionally it is never let out, it will not even know what being "out" is. I once had a pet rat. I would open the cage door in the evenings when I was watching Tv. When I opened the door to the cage it would come out and run the perimeter of the apartment. He would look for food even though he had plenty in the cage, because this is what he was programed to do. After he made his rounds he either came to lay on my chest or went back into the cage. He did not want to stay out. They like it in the cage because they feel safe. They are not people... They don't get bored like we do and are not programmed to roam like a dog. To keep a dog in a cage all it's life would of course be terribly cruel, not so for rodents. You may elect to give your breeders some time out of the cage as they will be alive a long time, but the non breeders will only be alive generally until they are large sufficient to harvest. It is best if they just stay in the cage all their life and don't even know what it is to go out. In one projection of the hutch there should be a nest for the rabbit and kits (babies) to sleep in. It would be a wood or sheet metal box concluded on top and all sides except for a hole big sufficient for the rabbit to go in and out. It is a plus if the top of the nest is detachable so you can look in if you want.

How much noise does the animal make? Again in this regard the rabbit is king and this is one presuppose they are best than chickens. de facto if your rabbits are out of sight, and you clean up the droppings from under the cage usually to keep the smell down, it is inherent that your neighbors might not even know you are raising rabbits. If they are terrified they will squeal and cry. Other than that they are basically silent. Compare this with chickens which make clucking sounds all the time, and of course if you have a rooster it crows every morning, for me a total deal breaker.

Legality: Rabbits are determined pets, so if you live in the suburbs you can't have a cow, pig, goat, or a bunch of chickens running around. If your rabbits are in there cages in a shed, there will probably be no problem. Note: rabbits need cool climate, so if you keep them in a shed it must be very well ventilated in the summer so the temperature in the summer does not go above the ambient temperature in the shade, which is already hot for the rabbits.

Breeding: Here again the rabbit is king. The rabbit is prolific to the point of being legendary. Most importantly the mother rabbit takes faultless care of the young up until they are weened. You can have a pretty good contribute of rabbits with one breeding male and three females.

Conclusion: seeing at the facts I can't see how the person who wants to grow some of there own meat can logically come to Someone else closing than the rabbit is the excellent choice. I find raising rabbits to be a great way to spend less money on food.

It is a big plus if you also have a garden, because all the green parts not eaten by the family can be given to the rabbits, and in turn the rabbit manure is used to fertilize the garden.

Turkey the Old-Fashioned Way

There are many appetizing ways to put in order and serve turkey. It might be deep-fried, brined, poached, grilled...to mention just a few methods of preparation. This article, however, will focus strictly on tips and techniques for preparing excellent turkey the old-fashioned way - oven roasted.

Basic Technique for Roasting a Turkey...

8. Set the roasting pan on the bottom rack of the oven to keep the turkey away from the top, which is the hottest part of the oven.

9. > 12 pound turkey for 8 people

> 15 pound turkey for 10 people

> 18 pound turkey for 12 people

> 21 pound turkey for 14 people

> 24 pound turkey for 16 people

- If you will be serving more than 16 guests (a recommended turkey size of more than 24 pounds), buy two turkeys that equal the total suggested weights.

- If the recommended turkey size is less than 12 pounds, you may wish to buy a turkey breast to roast.

How to Truss a Turkey...

To 'truss' means to acquire poultry or meat into a covenant shape. Trussing will ensure even roasting. The following technique is recommended when roasting poultry, especially a stuffed turkey.

1. To truss with string, take a piece of butcher's string about three times the distance of the turkey. Place the turkey on its back, tail end nearest to you. Slide the string underneath so that it is cradling the turkey in the town of its back.

2. Slowly pull the string up the sides...then around the wings. Pull the strings toward you, close to the breast, so that the wings are held against the body.

3. Cross the strings at the base of the breast, then wrap each string around the end of a drumstick.

4. Tie the ends of the string together, cinching it tightly so that the legs cross.

5. Finally, lift the turkey so that the tail end is up and wrap the string around the tail. Tie the string, pulling tightly so that the cavity is covered by the tail.

When is the Turkey Done?

You will want to test your instant-read or traditional meat thermometer a few days before preparing the turkey to ensure it is properly calibrated. Place the thermometer in a pot of boiling water. It should register 212F (100C) -- water's boiling point at sea level. If the reading does not reach the desired temperature, you will want to buy a new thermometer.

Keep a just eye on the thermometer during the last half hour of cooking since the internal temperature may rise rapidly toward the end.

Using a meat thermometer, test for doneness in the thickest, meatiest parts of the turkey:

Test the widest section of the breast near the wing joint; the temperature should be 165F (73C).

Test the legs at the top of the thigh, near the hip joint; the temperature should be 180 (82C).

If cooking a stuffed turkey, decree the internal temperature of the stuffing as well; it should be at least 165F (73C).

If using an instant-read thermometer, insert it deep sufficient to reach the heat sensor (the indentation about two-inches from the tip).

Also search for the juices and oils at the bottom of the pan that are released during cooking. If they have a pinkish tinge, continue roasting; if they are clear, the turkey is probably done. (Try to insert the thermometer as infrequently as possible, to forestall the juices from escaping.)

How to Carve a Turkey...

1. Begin by cutting straight through the skin where the leg meets the breast. Pull the leg away from the body with the fork and continue to cut down, close to the body, to find the joint where the thigh meets the body. 2. Place the leg skin-side down and uncover the line at the joint where the thigh and the drumstick meet. 3. take off the wishbone (actually the collarbone) from the turkey. Removing the bone will forestall it from splintering when you carve the breast meat.

4. Next, run your knife straight through the skin along one side of the breastbone. Then cut down along the ribs, pulling the meat Slowly away from the bones in one large piece, leaving behind as limited meat as possible.

5. When you reach the wing joint, cut straight through it and continue to take off the breast from the body. Repeat with the other side.

6. Finally, take off the wings and slice the breast meat before serving. (For even, exciting slices, cut the meat against the grain.)

The smart tags which will soon begin replacing bar codes in our supermarkets are genuinely pretty dumb: their only quality is reciting their Id code on command. With the next generation of Mems tags, the epithet 'smart' will be more fitting. Mems (Micro Electro Mechanical Systems) tags are able to accomplish measurements and calculations. Mems tags are especially tantalizing in association with very perishable goods like milk and meat. Studies have shown that the 'sell by' date on such products is dubious at best: milk only stays fresh until the given date as long as it is stored at the right temperature. A modern Thanksgiving dinner Menu That Retains Old Fashioned Elements

I love Thanksgiving.  It's a extraordinary time of year to just step back and think about the things in our lives that we should be thankful to have.  It's also a good time for good memories and good food.  traditional Thanksgiving recipes are usually pretty identifiable, and they are always something to cherish.  However, if you are feeling creative on your house holidays and want to consider some fresh ideas on some old fashioned favorites, here's a Thanksgiving supper menu that takes the proverbial cake, or pumpkin pie we might say.

Thanksgiving supper Menu Plan:

3 Inch French Door Refrigerator

Pumpkin Soup From a Crockpot
Cranberry Glazed Pork Chops
Squash Puff With Mandarin Oranges
Caramelized Onions on Cornmeal
Pecan Clouds With Hot, Sugar Free Cocoa or Hot Apple Cider

Thanksgiving supper Menu Recipes:

Pumpkin Soup From a Crockpot

1-29 oz. Can pumpkin pie filling
2-32 oz. Chicken broth
1 Tablespoon corn starch
1 stalk celery, finely chopped
1 small onion, finely chopped
1 bay leaf
½ teaspoon cayenne pepper
Salt and white pepper to taste
4 oz. Heavy cream

Stir cornstarch into ½ cup of room-temperature chicken broth.  Whisk until dissolved.

Pour remaining chicken broth into slow cooker and blend with pumpkin pie filling.

Add broth/cornstarch combination and rest of ingredients except for cream, and cook on low for 4 hours.

When ready to serve, add heavy cream.

Cranberry Glazed Pork Chops

6 boneless, thin cut pork chops (Turkey cutlets work well too)
1 ½  Tablespoon olive oil
1-16 oz. Can whole cranberry
¾ cup French salad dressing
4 teaspoon onion soup mix

Saute pork chops on both sides in oil in a large skillet for 10 minutes or until juices run clear.

Combine cranberry sauce, salad dressing, and soup mix in a microwaveable bowl.  Cover and microwave on high for about 2 minutes, until heated through.

Serve cranberry combination over pork chops.

Squash Puff With Mandarin Oranges

2-10oz pkgs. Freezing cooked winter squash, thawed
½ cup brown sugar, packed
1/3 cup butter, melted
1 teaspoon salt
½ teaspoon ground cinnamon
½ teaspoon nutmeg
1 egg, beaten
½ cup light cream
½ cup mandarin oranges
1 ½ cup mini marshmallows
¼ cup finely chopped pecans
1/3 cup honey

Mix the first 9 ingredients together and pour into a 3-quart casserole dish.

Bake for 25 minutes at 375 degrees.

Remove from oven, sprinkle with marshmallows.

Return to oven for an further 10 minutes.

Makes 6 to 8 servings.

Caramelized Onions on Cornmeal

1 ½ cup cornmeal
Fine grain sea salt
4 cups yellow onions (about 3 medium onions), finely chopped
¼ cup olive oil
½ cup Parmesan cheese
3 cups water or vegetable broth (divided)

Preheat over to 375 degrees.

Butter and flour a 9 x 12 inch baking dish.

In a medium bowl, couple cornmeal with 1 ½ cup water and ½ teaspoon salt.  Stir and set aside.

To caramelize onions, heat a splash of olive oil in a large skillet with a pinch of salt.  Cook over high heat, stirring occasionally but more often as onions get increasingly brown.  Continue cooking until the onions turn deep brown in color.  remove from skillet, and set aside.

Bring 1/1/2 cups water or broth to a boil in other medium sized saucepan, add the water and cornmeal mixture, and bring back to a boil, stirring until it is thicker than frosting, about five minutes.

Remove from heat, and stir in cheese and 2/3 of the onions.

Spoon combination into the ready pan, spreading evenly, and drizzle with almost 3 Tablespoons olive oil.

Bake about 50 minutes or until bottom is golden and cornmeal begins to pull away from the sides of the pan.

Serve topped with the remaining onions and more grated cheese if desired.

Pecan Clouds

2 egg whites
1 teaspoon vanilla
¾ cup brown sugar
2 cups pecan halves

Preheat oven to 250 degrees.

Lightly grease a cookie sheet.

In large mixing bowl, beat egg whites to soft peaks.

Gradually add sugar, lasting to beat until whites form stiff peaks.

Stir in vanilla and pecans.

Drop in rounded spoonfuls onto ready cookie sheet.

Bake one hour in the preheated oven.

Turn off heat.

Turning the oven off but holding the oven door shut, keep cookies in oven at least other hour or overnight.

Makes 2 dozen cookies.

Thanksgiving supper Menu Plan

Cook Pecan Clouds the night before Thanksgiving, removing in the morning.

Begin Pumpkin Soup in Crockpot 5 to 6 hours before dinner, holding hot pumpkin in crockpot on warm setting until needed.

Set up table settings and décor early in the day as much as possible to have this step completed before you start your final cooking steps.  (See below for some modern Thanksgiving garnish ideas.)

Mix glaze portion of Cranberry Glazed Pork Chops, and set aside to microwave when supper is almost ready to serve.

Assemble then bake cornmeal crust of Caramelized Onions on Cornmeal method and then Squash Puff With Mandarin Oranges recipe, baking both in same oven.  (Squash Puff will be removed for a few minutes to add marshmallows before baking final 10 minutes.)

Cook pork chops and faultless recipe.

Remove casseroles from oven, and place all food on the table.

Fruit Salad Recipes - Best Ambrosia Fruit Salad

Here's a superior method for fruit salad that many people love. It features pineapple, oranges, cherries, marshmallows and coconut.

2 cans pineapple chunks, drained

3 Inch French Door Refrigerator

2 cans mandarin oranges, drained

2 jars maraschino cherries, drained

1 can coconut flakes

1/2 bag mini marshmallows

4 oz. Sour cream

16 oz. Package Cool Whip

Directions

In a bowl, combine the sour cream and the Cool Whip. Fold in the remaining ingredients. Cover and chill in refrigerator for 2 hours before serving.

A deliciously cool salad to serve on a hot summer day.

1 (8 oz.) Package cream cheese

1/3 cup powdered sugar

3/4 teaspoon vanilla extract

1/3 cup mayonnaise or salad dressing

1(16 oz.) can sliced peaches, drained

1/3 cup maraschino cherry halves

1 (16 oz.) can fruit cocktail, drained

1 (8 oz.) can crushed pineapple, drained

2 cups dinky marshmallows

1/3 cup whipped cream

Few drops red food coloring

Additional whipped cream for garnish

Directions

In a bowl, whip the cream cheese with a hand mixer. Add in the powdered sugar and mix until well blended. Add in the vanilla and blend in the mayonnaise. Fold in the fruit and marshmallows. Fold the whipped cream into the mixture.

Add food coloring to mixture. Salad should now be a pale pink color. Ladle compound into 5 ounce serving or soufflé cups. Place in freezer and ice overnight.

Defrost at least 15 minutes before serving. Ornament with dollops of whipped cream and cherries.

1/2 watermelon

Cantaloupe balls

Seedless grapes

Peach slices

Pear slices

Strawberries, sliced

Red and black raspberries

Banana Slices

Pineapple cubes

Black cherries

Apple cubes

Fruit Salad Dressing

Directions

Scoop the red flesh out from inside of the watermelon with melon ball cutter. Drain the shell well.

Cut up the other fruits into chunks. Fill the watermelon shell with the watermelon balls and other various fruit chunks and berries. Chill until ready to serve.

Fruit Salad Dressing

4 1/2 teaspoons all purpose flour

1 (6 oz.) can pineapple juice

1/3 cup sugar

1/3 cup orange juice concentrate

2 tablespoons honey

2 tablespoons lemon juice

Directions

In a saucepan, combine all the ingredients. Bring to a boil; cook for 2 minutes or until thickened; stirring constantly. Cool. Serve over fruit. Refrigerate left over dressing.

If you need to make fruit salad for a crowd, like for a picnic or potluck, this method is a snap.

1 (30 oz.) can fruit cocktail, drained

1 (11 oz.) can mandarin oranges, drained

1 (20 oz.) can pineapple chunks, do not drain

2 firm bananas, sliced 1-inch thick (optional)*

1 box instant vanilla pudding

Directions

In a large bowl, combine all ingredients. Stir until the dry pudding compound is fully incorporated into the fruit mixture. Salad will appear to be runny, but will thicken as the pudding absorbs the pineapple juice.

Chill overnight. Stir before serving.

*Note: Add bananas just before serving.
